Instant Rice Pudding

Ingredients
  • 1 c. Shurfine Instant Rice
  • 2-1/2 c. Shurfine 2% Milk (divided)
  • ¼ t. Shurfine Salt
  • ½ c. Shurfine Sugar
  • ¼ c. Shurfine Raisins (optional)
  • 2 Shurfine Eggs, slightly beaten
  • ½ t. Shurfine Vanilla Extract
  • ½ t. Shurfine Ground Cinnamon
Instructions
  1. In a medium saucepan, combine rice, two cups of milk, salt, sugar and raisins.
  2. Bring to a rolling boil, stirring constantly.
  3. Reduce heat and simmer for 10 minutes, stirring occasionally.
  4. Mix eggs with remaining ½ cup of milk in a separate container.
  5. Slowly add egg mixture to hot milk mixture, stirring vigorously with a fork.
  6. Cook over medium heat until thickened.
  7. Add vanilla and cinnamon.
  8. Cool for ten minutes and serve warm.
