Ingredients
- Topping:
- ½ cup Shurfine Brown sugar, packed
- ¼ cup Shurfine All-purpose flour
- 1 teaspoon Ground cinnamon
- 1 ½ cups Shurfine Oats & More cereal
- 4 tablespoon Shurfine Unsalted butter, melted
- Cake:
- 1 ¾ cups Shurfine All-purpose flour
- 1 teaspoon Shurfine Salt
- 3 teaspoons Shurfine Baking powder
- ? cup Shurfine Unsalted butter, softened
- 1 cup Shurfine Granulated sugar
- 1 large Egg
- 1 cup Milk
- ½ teaspoon Vanilla extract
Instructions
- Heat oven to 350oF.
- Lightly grease a 9x9-inch baking pan with non-stick cooking spray. Set aside.
- In a medium bowl mix together brown sugar, ¼ cup flour, cinnamon and cereal. Set aside.
- In a small bowl, combine 1 ¾ cup flour, salt and baking powder. Set aside.
- In a medium bowl using an electric mixer, cream together ? cup butter and granulated sugar until fluffy. Add egg, milk and vanilla extract and mix until well blended, about one minute.
- Add the flour mixture to the butter mixture. Using an electric mixer, blend on low speed until ingredients are well combined, about 2-3 minutes.
- Pour batter into prepared baking dish.
- Sprinkle cereal mixture on top of the batter.
- Drizzle melted butter over the top of the cereal mixture.
- Bake for 35-40 minutes, until topping is golden brown and a toothpick inserted into the cake comes out clean.
- Cool slightly before serving.
