  • Topping:
  • ½ cup Shurfine Brown sugar, packed
  • ¼ cup Shurfine All-purpose flour
  • 1 teaspoon Ground cinnamon
  • 1 ½ cups Shurfine Oats & More cereal
  • 4 tablespoon Shurfine Unsalted butter, melted
  • Cake:
  • 1 ¾ cups Shurfine All-purpose flour
  • 1 teaspoon Shurfine Salt
  • 3 teaspoons Shurfine Baking powder
  • ? cup Shurfine Unsalted butter, softened
  • 1 cup Shurfine Granulated sugar
  • 1 large Egg
  • 1 cup Milk
  • ½ teaspoon Vanilla extract
  1. Heat oven to 350oF.
  2. Lightly grease a 9x9-inch baking pan with non-stick cooking spray. Set aside.
  3. In a medium bowl mix together brown sugar, ¼ cup flour, cinnamon and cereal. Set aside.
  4. In a small bowl, combine 1 ¾ cup flour, salt and baking powder. Set aside.
  5. In a medium bowl using an electric mixer, cream together ? cup butter and granulated sugar until fluffy. Add egg, milk and vanilla extract and mix until well blended, about one minute.
  6. Add the flour mixture to the butter mixture. Using an electric mixer, blend on low speed until ingredients are well combined, about 2-3 minutes.
  7. Pour batter into prepared baking dish.
  8. Sprinkle cereal mixture on top of the batter.
  9. Drizzle melted butter over the top of the cereal mixture.
  10. Bake for 35-40 minutes, until topping is golden brown and a toothpick inserted into the cake comes out clean.
  11. Cool slightly before serving.
