Ingredients
  • 1-3/4 c. Shurfine Bran Flakes Cereal
  • 1 c. lowfat buttermilk
  • 1 egg beaten
  • 2 T. Shurfine Vegetable Oil
  • 1 c. Shurfine All-Purpose Flour
  • ¾ C. Shurfine Sugar
  • 1 T. Shurfine Baking Powder
  • 1 t. Shurfine Ground Cinnamon
  • 1 c. Fresh, frozen or canned blueberries, drained
  • ¾ c. Shurfine Wheat Bran Flakes Cereal, crushed to ⅓ c.
  • 3 T. packed Shurfine Brown Sugar
  • 1 T. Shurfine Margarine or Butter, melted
  • *1 tablespoon lemon juice or vinegar and enough milk to equal 1 cup may be supstituted for buttermilk.
Instructions
  1. Preheat oven to 400°F.
  2. Grease or paper line 12 (2-1/2-inch) muffin cups.
  3. Combine 1¾ C. cereal, buttermilk, egg and oil in bowl. Let stand 5 minutes; stir to break up cereal.
  4. Combine flour, sugar, baking powder and cinnamon in separate bowl.
  5. Add cereal mixture all at once to flour mixture, stirring just until combined. (Batter will be thick.)
  6. Fold in blueberries.
  7. Divide evenly among prepared muffin cups.
  8. Combine ¾ C. cereal, brown sugar and margarine; mix well. Sprinkle over muffins.
  9. Bake 20 to 25 minutes or until tester inserted in center comes out clean.
